Fructofin® fructose from sucrose
Danisco’s brand, Fructofin® fructose, is a hexose monosaccharide and is produced commercially by the hydrolysis of sucrose to form fructose and glucose. Fructose is subsequently separated from glucose via special ion exchangers and crystallised to a purity of over 99%.

Fructofin® fructose health benefits
Fructofin® fructose offers numerous health benefits to a variety of consumers including those managing their weight, the clinically obese and non-insulin-dependent diabetics (NIDD), and athletic consumers involved in sports activities. These benefits stem from the body’s physiological responses to fructose which are different from those to other sugars such as glucose and sucrose. Fructofin® fructose passes more quickly in solution from the stomach to the intestine, is more satiating and has less effect on blood glucose and insulin levels. In addition, Fructofin® fructose can be up to 80% sweeter than sucrose so calorie savings can be made without the loss of sweetness.
Technical characteristics of Fructofin® fructose
Fructofin® fructose is a highly soluble monosaccharide. This means that it is lower in viscosity than equivalent solutions of sucrose, is more hygroscopic and exerts a higher osmotic pressure in solution.

- Enhances flavours, particularly those of fruit, chocolate, coffee and vanilla
- Masks the bitter after-tastes of intense sweeteners such as acesulfame-potassium, aspartame, cyclamate and saccharin
