Fructofin® fructose solubility
Fructofin® fructose is one of the most soluble sweeteners. It has a higher solubility than sucrose or glucose at equivalent concentrations and temperatures. Fructofin® fructose is therefore a suitable sweetener for dry mixes, especially beverages, cakes and desserts where it enables rapid reconstitution.
Fructofin® fructose is also more soluble in alcohol than sucrose enabling the production of sweetened liqueurs at higher dry substances. This property can be advantageous in applications such as liqueurs and liqueur-filled chocolates.
