The humectant properties of Fructofin® fructose help bread retain moisture while also adding a degree of sweetness — important for certain bread types.

Fructofin® fructose has a high osmotic pressure and a low water activity. Therefore, it inhibits microbial growth on packaged baked goods thus extending their shelf life.
