History Discovered in 1847 by Dubrunfaut, pure fructose has been used as a sweetening agent since 1857. Its sweetening powers have been valued from the time of the Egyptians, who used honey as a sweetener; honey contains over 40% fructose.
Commercial production of the crystalline fructose used today originates from the pioneering developments of Danisco. In the 1960s, Danisco perfected the technology needed to produce crystalline Fructofin® fructose from sucrose.
