Fructofin® fructose flavour and taste

Flavour enhancement

The sweetness perception of Fructofin® fructose peaks and falls earlier than glucose and sucrose. Therefore, sweet overtones do not linger and the perception of the food's flavour is heightened. In particular, Fructofin® fructose enhances fruit, cinnamon, vanillin and chocolate flavours.

Sensory studies have demonstrated that Fructofin® fructose actually brings out the chocolate flavour of milk chocolate drinks. As a consequence, one can be more innovative with the formulation of beverage products as it is possible to reduce the quantity of flavours and/or acidulants added.

Tastes and aftertastes

Fructofin® fructose has the ability to mask bitter and metallic tastes and aftertaste. This is especially true when combined with intense sweeteners. Independent research has shown that the incorporation of 1% fructose in solutions of saccharin or acesulfame-k (total sweetness equivalent to 10% sucrose) dramatically improves the taste profile in comparison with solutions of the intense sweeteners alone.
