Jams, Preserves & Fruit Preps

Fructofin® fructose is the superior sweetener for jams, preserves and fruit preparation because of its inherent ability to enhance fruit flavours. Its high solubility also allows for Fructofin® fructose to be added to, and dissolved directly in, the fruit preserve, often without additional water. This can improve product quality as well as accelerate processing times.

The incorporation of sugar in jams and preserves serves a threefold purpose:

  • to impart sweetness,
  • to reduce microbial activity through osmotic pressure and reduced water activity
  • to provide body.

Compared to sucrose, the relatively high sweetness of Fructofin® fructose can help with sugar and calorie reduction. Fructofin® fructose can provide the same sweetness and osmotic pressure as sucrose but in lower amounts, making it possible to reduce the sugar content of jams and preserves.

The increased osmotic pressure of Fructofin® fructose in solution, when compared to sucrose, means that adding Fructofin® fructose in smaller amounts than sucrose will result in lower or similar water activity.

When Fructofin® fructose is used in combination with low calorie, high intensity sweeteners, such as aspartame and Acesulfame K, the result is often an improved, perceived sweetness with less bitter off-notes

Fructofin® fructose has a lower molecular weight than sucrose. When replacing sucrose with Fructofin® fructose, it may be necessary to make adjustments to the stabilisers used in the jams and preserves.
