When stored under recommended conditions, Fructofin® fructose is shelf-stable and retains its free-flowing characteristics.
At relative humidities above 60%, there is a marked increase in water absorption. It is therefore advisable that care should be taken to control the humidity in production and packaging areas.
Moisture-impermeable packaging is recommended. An anti-caking agent may be needed in products packed in sachets since these have a relatively high surface area to volume ratio that can permit the ingress of moisture.
